As summer reaches its peak, the Mandarin Oriental Qianmen, Beijing unveils a new seasonal menu at Yan Garden by Chef Fei, highlighting the freshest summer produce, premium seafood and refined Lingnan flavors.

Built on the themes "lightness, freshness, nourishment, and vibrancy", the limited-time menu presents a progression of chilled appetizers, seasonal vegetables, seafood specialties, and restorative soups designed to suit the warmer months.

Drawing on the Cantonese principle of eating in harmony with the seasons, the dishes emphasize naturally sweet fruits and vegetables, delicate cooking techniques, and the clean flavors of river and ocean ingredients.

Among the standout dishes is Yunnan Tomato Terrine with Plum Sauce and Beetroot, which uses high-altitude Yunnan tree tomatoes known for their bright acidity and fragrant sweetness. The tomatoes are paired with a jelly made from preserved plums, apples and pineapple slowly marinated over five days, creating a chilled appetizer that is both refreshing and lightly tart.
