Malubianbian Sichuan Hotpot Restaurant opened a new branch in the Sanlitun area of Beijing. Its decoration is designed to inspire nostalgia, transporting its diners back to the 1980s. However, it is the dipping sauce that's key to the whole Sichuan hotpot experience-a mix of minced peanuts and chili powder, with a spoonful of the soup base of the hotpot. Spicy tender beef and little Sichuan sausages are the best morsels to marinade.
