Two-Michelin-starred restaurant Shanghai Cuisine opened a sub-brand Wanxiehui in Beijing's Chaoyang district, aiming to bring Shanghai's local cuisine to diners.
According to chef Zhu Haifeng, the name of the restaurant, which means "meeting friends and family", comes from Shanghai dialect. He hopes to create the snack culture of longtang, old-style Shanghai alleys, through Shanghai-style noodles.
The noodle with different toppings is one highlight of the restaurant. From crab meat and roe to pickled cabbage and yellow croaker, each topping and each bowl of noodle are made-to-order.
The fried-shredded eel is one must-try, as the eel is mixed with pepper, scallion oil and special sauce, presenting a sweet and spicy flavor.
