山西面食文化历史悠久,蒸花馍就是其中一项。但唯有霍州的花馍被称为年馍,足见其厉害程度,是食物,也是艺术品。霍州年馍最大的特点就是用老酵母发面,不放碱面,这样蒸出来的馍滋味足、耐嚼。花样繁杂的年馍,朴实而又生动,是霍州人对于来年美好生活的想象与寄托。
