Bacon-wrapped scallops with green pea puree
Ingredients:
Australian scallops, bacon, balsamic vinegar, green peas, Parmesan cheese, Brussels sprouts, olive oil, tomato, lemon juice, chili sauce, sugar
Steps:
1. Boil the green peas in water until soft and tender, and mash them up.
2. Melt the Parmesan cheese in a hot pan into a flat piece. Set aside to cool completely.
3. Place each scallop on one end of a piece of bacon and roll the bacon around it.
4. Heat olive oil in a pan, and fry the bacon-wrapped scallops on two sides until they turn light brown.
5. Heat balsamic vinegar and sugar in a pan to make sauce.
6. Mix diced tomato with chili sauce and lemon sauce to make salsa. Use leaves of Brussels sprouts as containers to hold them.
7. Arrange the fried bacon-wrapped scallops, Parmesan cheese and salsa on a big plate and top with balsamic vinegar sauce.
