The king of scallops
Scallops are a popular ingredient in both Chinese and Western cooking. When we eat scallops, we usually are referring to the round, fleshy white meat in the shell, which is the scallop's adductor muscle. There are many ways to eat scallops such as grilled, baked, deep fried, broiled and steamed. Choy's Seafood, the Chinese restaurant at the Beijing Marriott Hotel Northeast, is promoting various ways to eat the large scallop king until the end of February. Have it stir-fried with greens, deep fried with Sichuan peppercorns or coated with oats.
