Smelly fried bean curd

It is a famous snack of Changsha with a delicious taste. Its major characteristic is it smells odoriferous but tastes nice. Many people from other provinces are of full praise after tasting it.

In Changsha, the most delicious bean curd with odor is supplied in Fire Palace which is about 100 years old. The surface is burnt and has a crisp taste; the inner part is soft and fresh.

The fried bean curd with odor was popular with Mao Zhedong when he studied in Changsha, as it was cheap and tasted nice.

Generally speaking, make use of Liuyang lobster sauces with high quality, adding winter bamboo shoot, mushrooms and Qujiu(a kind of wine) to boil them into bittern. Marinate the tofu embryos with high quality in the bittern. After 3-5 hours, pick the tofu embryos out and clean them with clear water. After draining, heat the top-grade oil of green tea and pour it into the tofu embryos. Fry them to be burnt with a weak fire. Put the bean curd with odor that has been fried into the plate and pour seasonings such as chili oil, sesame oil and soy sauce onto the meal. At this point, an attractive fragrance should salute your nostrils.
