Taigu pancake

Taigu Pancake

This pancake is a special local product in Taigu County of Shanxi Province, with a history of more than 400 years. It is named after the Taigu County. The pancake is thick and soft, sweet and aromatic, and with a unique flavor. If the cake is stuffed with jujube paste or other candy fillings, we have stuffed Taigu Pancake.

Ingredients:wheat flour 500g, lukewarm water 125g, sugar 125g, malt sugar 50g, oil 150g, soda ash 30g, some sesame seeds.

Preparation:

1. Mix up wheat flour, sugar, oil and malt sugar in a basin, add water and knead. Put on kneading board, make a dough bar, and tear into lumps. Knead each lump until shining white, then stick with sesame seeds and press into pancake shape.

2. Put cakes into hanging oven. Bake tops first, turn over when surface hardened. Put on the cover (not air-tight) for about 10 minutes.
