Cuisine Fit for Spring Equinox (Ⅰ)  
 

During the Spring Equinox period, one should preserve his health with proper diet according to his own health conditions. Keep in mind that hot and cold foods are not suitable. To reach the balance of Yin and Yang, one should put some hot condiments to neutralize the cold when cooking cold foods and when eating papaya and garlic, together with some eggs to nourish the Yin. Keep a regular life schedule and stay optimistic to preserve your health.

Braised eel with a little soy sauce

Ingredients: 500g eel, cooking wine, scallion stalk, ginger, salt, pepper and vegetable oil in reasonable amounts.

Instructions: First: wash eel, remove the bones and cut into sections.

Second: when the oil is almost heated, put the eel into the pan; add scallion stalk and ginger; stir-fry for two minutes.

Third: add cooking wine, salt and some water to braise until they are cooked, then add some pepper.

Effects: nourishes body deficiencies and prevents blood from passing in one's stool

Tips: peeper is essential for eel cooking.
