Cold-water Fish

The Sayram Lake in the Tianshan Mountain is the largest alpine cold-water pool in Northwest China'sXinjiangUygur Autonomous Region, with an area of about 460 square kilometers. It is an ideal habitat of many species of birds including mallards and swans.

In the lake there are 16 species of cold-water fish that were introduced from Russia, such as the pelyad, a cold-water fish that is said to be highly nutritious. The fish has been quite welcomed by the markets after being successfully bred in the Sayram Lake.

Reputed as the "cleanser of the cardiovascular system" and the "organic food in the fish family," the pelyad is generally said to taste good, whether raw or cooked. Many other regions in China are trying to breed this variety of salmon.
