Chinese Food Sculpt

 

Tools and Materials Cutters used during the food sculpture are called gravers. Gravers are always designed for the demand of a specific individual. That’s also the reason why there are so many kinds of gravers: sharp point knife, round mouth knife, oblate knife, knife with blade, diagonal knife, scraper knife, perching knife, mould and square knife.

The main materials:

1. Pumpkin

There are two kinds of pumpkins for sculpture: one is round for a pumpkin bowl and the other is long for birds and animal sculptures. The pumpkin should have fine texture, enough moisture and pulp that can be sculpted.

2. Cucurbita maxima (cucumismaximaduch)

The cucurbita maxima are good materials because of the bright color. The cucurbita maxima are a little bitter, so they are always sculpted as pedestals of other sculptures and not touched with food itself. The round or square cucurbita maxima are preferred by cooks for sculpting.

3. Watermelon

We are familiar with watermelon and love its colors. A round and mostly mature watermelon with a bright green peel is appropriate for a watermelon boat or basket.

4. White gourd

White gourd is appropriate for embossing to be a white gourd soup cup. The selection principles are similar to watermelon round and mostly mature white gourds with a bright peel are preferred.
