Beef and Mutton

Tibetans like to eat beef and mutton because meat can provide people enough energy to withstand the cold in areas of high elevation. Usually Tibetans boil beef and mutton with salt, ginger and various spices. They take the meat by hand and cut it using their knives.
It is very interesting that Tibetans also like to eat dried beef and mutton. In the winter, Tibetans cut beef and mutton into long strips and hang it in the shade. The dried meat is crisp and tastes good. Dried beef and mutton will be found hanging in Tibetans' tents if you pay visits to local families, and the host may treat you to this special highland delicacy.
