The Chinese New Year - Just Share It contest provided a chance for participants from all over the world to tell their stories of the Spring Festival. 风鸡

小的时候,过年意味着父母要大动干戈地准备食品。从天气渐寒的日子就开始准备,日子在劳作和期待中渐渐充盈起喜气。我的父母已经简化了许多过年工序,只有做风鸡不会省略。

初冬时节,早早地买上十来只健壮肥硕的公鸡,把它们放在家里圈上几天,清空肠胃。宰杀之后不拔毛,在翅下或者腿跟处开一个口子,清干抹净内膛,再用调料把腹腔填塞结实。调料很简单:葱姜蒜,花椒大料盐,在鸡毛中也要均匀揉搓进去。一切做好之后,用细绳把鸡绑紧了,盖上塑料布,挂在阴凉处慢慢风干。鸡杂可以腌起来,也可以用辣椒爆炒了当下酒菜。

风鸡的关键是风干,凡通风阴凉的都是好地方。有时候雪来得早,不留神,整只鸡都被盖严实了,但因为有塑料布,并不妨事。下雨有点麻烦,父母把盖着塑料布的鸡用长竹竿挑到干燥的地方,和一大排冻得直挺挺的衣服挂在一起。

来回走过屋檐,仰头看,对年的期待一点点漫上心头。终于有一天,父母说,今天蒸一只试试看。于是兴高采烈地用晾衣杆挑下来一只,拔了毛,洗净,上锅蒸。锅盖掀开的一刹那,香气盈满了厨房,大人小孩都忍不住叹了一口气。鸡皮明黄透亮,肉色淡红,咸香馥郁,可以吃一大碗米饭。如果鸡肫鸡肠也腌了的话,虽入口坚韧,不易撕断,慢慢地嚼一会儿,从咸而鲜,滋味的层次就出来了。风鸡也可以和香肠腊肉一起蒸,盘子下面铺上切细的千张丝。蒸汽烘托,风鸡和腊肉的油汁渗入千张,豆香中有独特的脂肪香气。腌好的鸡肫像一粒粒带着花纹的小贝壳,可以存放很长时间。

风鸡做好了,爸妈每年都会给亲友打包寄去:安庆姑妈两只,池州齐伯伯两只,宿州舅舅两只……春天到的时候,他们也会寄来大包的茶叶,还有炒米和黑芝麻粉。

在快递不存在的年代,我们寄东西都是到邮电局去。伏在桌上,在白色的粗棉布上描好地址,用缝被子的棉线细细密密缝好袋口,再把包裹在自行车后座上绑好,到邮电局去排队。冬天路滑风大,手冻僵了,推自行车要小心,顶着寒风,一定要慢慢地走。
